2 pounds kosher salt on Bunn commercial coffee filters, and a pound (big bottle) of Heinz ketchup. Getting 4 hours of Pecan.

Let us know what you think of the ketchup. I've never used that much smoke on it, so curious how it will turn out.

Will do! I'll probably pull it out after 2 hours, and swap the salt racks. Even with the ice, it's 141° in there..

I pulled the ketchup after 2.5 hours. Gave it a stir, then slide the pan into a ziplock bag to chill in the fridge.
Salt is getting happy...

Yes and yes. I just did one big bottle. Next time I'll do 3 or 4 of the smaller bottles, so they can divvy them up.
It's really good! I'm surprised.. It's like bold smokey ketchup now.

Ketchup was very good..... We had some 'smoked ketchup' (with some kind of appetizer) at Mike Shannon's restaurant in St Louis - it was excellent.
2.5 hours of smoke on the ketchup, 4 solid hours on the salt.
Save a droplet of that ketchup for me if you can! I wanna taste it..

Can do! It will spend a good 2 weeks in the fridge getting happy... (school is out for 2 weeks, we leave for Mexico on Wednesday - returning the following Wednesday)
I wanted to smoke some cheese - but it's been too damn hot! Even cold smoking with a pan of ice, my OBS hit 175° when the sun was beating on it.
