This is something that has always interested me and is extremly hard to find. It is called indian candy and is salmon that is cured in sugar? and or maple syrup?. If anyone knows I would be greatful and quite possibly be willing to ship out the final product. Thanks

The good people at bradley have a recipe in their file. ALL HAIL THE GODS OF SMOKIN. It really is the meca for smokers I bow down to thee. It will be tried out this weekend, let you know how it turns out. ritzdeliman.[:)]

Tried the first batch, perfect texture 140 deg for 6 hours, however it was a little too salty even with the maple syrup brushing at hour three. Maybe try cutting salt in half? will probably try again. ritzdeliman

Ritz-have you looked at Kummok's recipe for salmon strips? It will make your taste buds get up and sing!

I used Kummok's recipe on some steelhead last night. Came out great.
Was quite sweet for my taste though. Next time I will use less brown sugar and more salt. If you do it by the recipe, you wont be let down.

common sense isnt common
