This gas fire unit was given to me. I'm doing electric with propane burner and installing pipes for steam. I have a steam generator for my brew system and
figured on using it to steam sausage.

Pid works great I can't believe the temps. 25 lbs. of sausage when off without a hitch.

Basics
2700 watt 240v element
control panel
1st switch= power
2nd = start
3rd = power up Bradley smoke gen
4th = power convection fan
5th = power air pump for pellet smoke gen
When IT reaches set temp shut power off to the PID

Casings are 35-38 mm it will be cut in bite size with maybe some bbq sauce.
I'm rethinking steam, but I'll probably do it later. Need more time
