Title: Saturdays Cheese Smoke

The store only had cheddar and colby jack not much selection.
The temperature was 76* here so I placed a two gallon freezer bag of ice in the master built, filled  two six inch tubes with hickory sawdust and the cabinet temperature was a perfect 90 *. The sawdust only lasts an hour so I had two more ready to go. The temperature had dropped so I removed the ice and only needed one tube to maintain the 90 *. Smoked for three hours.

Will get more cheese today and apple pellets. Just to try the flavor. We like the hickory flavor the sawdust gives. Got ten tubes loaded with dust and ready.
