Title: Canadian Bacon Jerky

I wasn't sure if this was going to be a recipe for trichinosis but it was good. I made a bunch of Hab's Canadian Bacon and threw some in the dehydrator.

After it was finished I stored it in the refrigerator.

This looks good. Now you need to do that with pastrami and report back. :)

The jerk will be save. The parasite that causes trichinosis ( Trichinella spiralis)is destroyed at 137°F, but I would also thing that the dehydration of the meat would also kill it. Also do to changed in feeding methods, U.S. hogs are free of this parasite.
