Tried a recipe from the Serious Eats website and made the easiest and tastiest carnitas ever.

Chunked about 5 pounds of pork butt, added smoked salt, orange juice & peel, onion, garlic, bay leaf, cinnamon sticks, and some oil.

Covered in foil and then into a 275o oven for 3.5 hours.  Remove orange peel, onion, garlic, cinnamon stick, and bay leaves.  Strain, add defatted juice back in, then shred before serving or storing in fridge or freezer.  To serve, crisp under broiler and use to make your favorite taco, burrito, or whatever.

No mess, no fuss, and awesome taste. Might partially smoke or grill the butt beforehand next time but even as is, this was an experiment that worked.

nepas - Probably not as authentic as yours, but so much easier for a lazy turtle.

Never had carnitas with orange, but hey, bet it was very good.  I did not think orange and beef would go well untill recently.

We all knew that Hawaii is south of the border so Hawaiian Carnitas  aren't a surprise.

Nice, very nice.
