Tried my hand at making these today. Found some chicken quarters on sale for $0.59/lb and used up the drumsticks for this sausage. Thighs went into the freezer for later dinners. Recipe breakdown is:
Spinach - 17% (Weight after thaw and sitting in colander for 30min)
Feta - 4%
Marjoram - 0.1%
Salt - 1.2%
Black Pepper - 0.1%
Minced Garlic - 1.7%
Mix everything thoroughly except for Feta. Once everything is mixed, gently fold the Feta into the sausage and stuff.
I had a blowout so that one became tonight's dinner.

Pretty darned tasty and a heck of a lot cheaper than the $6.49/8oz my local market wants for them.

Maybe it's cause um looking only iPhone. I only see % symbol after the ingredients. ........ Ok, back to work I go. :)

I use percentages instead of exact measurements since most of my sausage meat is leftover meat from other uses. Just multiply the weight of your meat by the % of each ingredient.
