Turkey is reaching it internal temp 2 hours prior...  What should I do to slow the process or to ensure it doesn't over cook..?

Wrap in plastic wrap, foil, a towel, and put into a cooler. I prefer getting mine done 60-90 mins early and doing it this way.

In the cooler she went at 174 degrees... I hope she will sit tight and do her thing for another hour or so...  Thanks

It all worked out fine.. THANKS... She was a little over cooked on the tips of the white meat and I could have let it sit for about ten to fifteen mins once I took it out of the cooler before cutting...
