Alton Brown Style Jerky

In the other post with the AB Food Network clip he did his style of jerky. I posted how i did my style of low dehydration. My jerky went in at 12:00 in the am and came out at 11:30pm. Temp started at 70* and i bumped it to 90*. I did use cure in it.

I have them seperated because of 2 different flavors. The jerky on the paper towel is back woods hickory style. The jerky on the cutting board is high plains hickory/black pepper style. Note it is darker because of the sauce i used.

Cooling then into the JERKY JUGS  ;D



I would post the recipe but its a secret receipt  :D :D
