Encapsulated Citric Acid

What can I use instead of encapsulated citric acid in some snack sticks?

Fermento or butter milk will give you a tang.

The fermento costs more and it needs more time at a lower temp to do the work.

I use powdered butter milk.

I have the Buttermilk, how much do I put in as a conversion if the recipe calls for ECA?

Well, I took a SWAG and added 1 cup and the leftover fried up patties taste pretty good to me.

I was going to say last 10 lb I did I added 2 cups.

How many lb did you add 1 cup to?

5 pounds add 0.40 oz

10 pounds add 0.80 oz

25 pounds add 2.00 oz

Regular CA (Non ECA)

5 lbs add 0.40 oz

10 lbs add 0.80 oz

25 lbs add 2.00 oz

ECA

5 lbs add 1.80 oz

10 lbs add 3.60 oz

25 lbs add 9.00 oz
