Title: Turkey Pastrami

I am 1 day into the cure of Habs pastrami and was just wondering if anyone ever tried it with Turkey ?

I'd be interested to hear about turkey pastrami as well..   I haven't gotten brave enough to cure something yet, but winter isn't that far away.

I would start with Hab's Canadian Bacon. It is an easy recipe and tastes great.

Sounds good, thanks.   I might invest in a small 'travel refrigerator' to put out on my workbench for these kind of experiments...

I made some with thigh meat, I did post my results, but I don't have time to do a search right now. I cures some with salt and some with cure #1. The one with cure #1 had more of a pastrami taste.
