Title: question about pulled pork
Post by: smashraj84 on April 25, 2008, 04:10:18 PM
So I'm gonna be done my pork butt around 10-11pm tonight.  I'm serving it tomorrow for an NFL draft party.  I was wondering, should I mix the vinegar-based sauce with the pulled pork now?  or should I mix the sauce with the pulled pork when I'm serving?

I prefer to add the vinegar-based sauce when serving.

First off, you are the man! I've had parties for just about every occasion I could think of, but the NFL draft is one I've never thought of. I'm more of a college football guy, but I'll admit that I missed a chance for a party. As for the pork, I always put the sauce on when it's done. That will give it a chance to soak in and let the flavors "mingle", and you can always add more sauces (even of a different kind) when serving. Just my opinion, everybody does it their own way. Good luck with the party! :)

I'm actually going to the Eagles stadium to tailgate...should be fun.  I'm a college football fan as well.

So 1 person for right after it's done, 1 for when serving.  I guess I can't go wrong either way.

Nope, It is a personal taste thing.  I add when serving to let the recipient choose if they want it or not.  Some do, some don't.  If they have no choice, I bet they won't refuse it anyway.   :D :D

Score 1 more for "on the side" - Sometimes it is SOOOO good, it doesn't _need_ sauce!

I add the vaunted vinegar right away, and have extra so that if someone wants to add more they can. I also will have some other sauces available, for those who may want to add a tomato base sauce.

Does anyone else find that the artificial smoke flavor in commercial sauces often clashes with the real flavors on pulled pork? I.e. kraft.

Never tried the artificial while smoking.  Don't think I want or need to.

With smoked foods I use a barbecue sauce without any smoke flavoring added. There are a lot of commercial sauces with out smoke flavoring.

The only exception, and I generally never make an exception to this rule; is Iceman's sauces. He has the perfect combination of heat & sweet, and other flavorings; including smoke. I use his sauce on a lot of my smoked foods.

I gotta second and third the vote on Iceman's sauce.  If I don't have any of Pat's sauce, I eat it naked.

Before you get any ideas, LQ, just know that I'm 6'2" and 240 pounds of molten lust  ;D.  No, I wouldn't try to ruin anyone's meal by eating naked.  However, I treat Iceman's sauce like PETA treats fur.  I'd rather be naked than eat any other!

Hey guys, here's a thought-we can take naked pictures of ourselves and threaten to send them to La Quinta if she doesn't keep us all supplied in Ice's sauce! ;D

I think you're on to something there, OT!  But I suggest we use different, varying meats to cover up our unmentionables.  Always keep 'em guessing.  I'd like to volunteer to be the first one and would suggest that I go with a pork loin.

We may even be able to start a "Men of Bradley" calendar and raise money for various non-profit agencies  :D

You know, Duck, I get a little nervous reading words like naked, pork loin, and "pulled pork" in the same thread.  How wide of a lens do you think we'd need to shoot the pix for that calendar?

Cheers. ;D

I'm not sure how wide we'd have to go, Consig, but I would suggest a camera that is way out of focus!  You know, when you do put all those words together, it does get a little scary  ;D

I think I'm late to the party here, but I noticed someone mentioning Ice's sauce on eggs.

If you want to really do eggs up right (and don't get me wrong, I'm a big fan of Ice's sauce), try a Chipotle sauce.  I use Bufalo brand.  Whoa nellie, that'll start your day off with a bang.
