Title: More cheese and eggs

We opened up my first batch of smoked cheese yesterday after sitting for 5 weeks and were so pleased with the result that I immediately knew I had to start some more, it won't last long.  I did 5 pounds of a mixture of sharp cheddar, Gruyere, Jarlsberg and Friulano.  Can't wait to try these after 2 hours of cherry smoke.

I figured I may as well throw in some hard boiled eggs at the same time for an hour of smoke.  I kept two aside to make probably the best egg salad sandwich I've had in a long time.  The other eggs were slated for pickling along with some sweet peppers, garlic and onions that were smoked too.

Lots of fun these smokers, having a blast.

Looks great!  Can't have enough smoked cheese.  Try making deviled eggs with the next batch you smoke.  We love 'em.

In my smoker, I have more than one rack. I usually smoke 7-12 lbs. of cheese at a time. This way I still have a package or two left before the next batch is ready.
