Title: Smoked garlic

What do you do with smoked garlic, from reading it seems that some use it just like raw garlic, and some eat it?

Hi Hooked on smoke,

In the main I cold smoke garlic and use it just as I would raw garlic in recipes, sure other people have other ideas.  :)

Smoked garlic stuffed inside a thick steak then thrown on the grill!!  Thats my favorite thing, but you can use for anything you would normally put garlic in, gives it nice touch of smoke flavor!

You can also hot smoke it. To hot smoke, remove any loose paper, slice the top off smoke at 200 - 225° F. When soft take out of the smoker, and squeeze the bulb to get all the pulp out. You will have some nice smoked roasted garlic paste to use in your recipes.

My questions for hot smoked and cold smoked,
How long can it sit in the fridge
Any special way of storing it for longer shelf life

Good question. I've never smoke garlic in bulk, just small amounts for immediate use. For hot smoke, I would think 7-10 days in the refrigerator, but you can also freeze the paste for longer use.

I've never tried the cold smoke method.

I have kept cold smoked garlic bulbs in a cool dry place for at least 3 weeks.  :)
