Title: Low and slow beef ribs for dinner

Hello all,

After some issues with the butcher picked up some uncut short ribs.  Get beef ribs at the Ren Fair near here but they just don't have enough meat on them.  So I pick up some of their seasoning and some short ribs every so often.

Six nice ribs -

Salt them up (the one thing the seasoning is missing).  I know I should remove the skin off the back but I like the flavor -

And into the smoker with the rub, a couple potatoes and pecan smoke -

Not low or slow enough.  Got done 2 hours earlier than expected.  Tasted good and tender but not what I was shooting for.  Potatoes were barely done but could have used the extra couple hours.  Looks like 250 was too high.

Hey !!! they still look good and it looks like the meat pulled back from the bone, not enough smoke flavor ...?

It didn't get to stay in long enough to melt the fat to lub the meat.  It was good, I just hope to make it better.
