Title: My first try at cheese

I smoke some cheese today for the first time. The temp kept going up so I just cracked the door a little. I smoked it for two hours with hickory. Just have to wait see how it tastes in a couple of weeks. I will have to make a cold smoke box next time.

No worries Dirt...it'll  be great...I've done that before...you'll love the taste way better than you can buy...it's a long wait tho!!!  :P

Yes the wait is the hardest part for sure but its worth it. I was actually thinking about getting a bar fridge to store cheese. One shelf for each smoker date, that way I will not have to wait.

Good luck with your smoked cheese DC...we opened our first smoked cheese yesterday and it's nearly all gone with the help of two sons with their familys...like Devo and the rest of this really great group on this forum said the wait will be well worth it...
