Title: Smoking Geese or Doves

Does anyone have any tips on smoking wild fowl?  I am not a hunter but have relatives that are.  They are thinking of trying to smoke as something  different.  I have no idea where to sttart.  Thanks for your help!!!  :)

I smoked a goose breast, last week.  The goose was wild.

I didn't take a picture went it was finished, but it was good.  (I forgot until too late)
All I did was salt and pepper, wrap in bacon.
Started out at 120 for an hour, then at 170 (adding some smoke for about an hour) till IT of 165.

I brine geese and pheasants for about 5 days and then smoke them.  They turn out great.  I would think dove would be just as good.
