Back from vacation

Rain is holding off thus far so what the hey, set up the BS, put lamb in on second rack (forgot to spray washables with pam - darn - I guess cleaning will take a little more effort), using maple instead of apple (since it was already open), put drip pan 2 racks down to catch the juices for gravy.  Will smoke for 2 and a half hours at 190 - 200 and FTC when she is at 150.  No pictures this time cause the camera is on loan to a friend.  Time to pop a top and sniff the smoker for awhile.

Results are in on my second experiment with lamb.  First time at 160 - 165 internal temp and it was too done.  This time I took it to 145.  Was planning on going to 150 - 155 but rain was approaching.  :o Cooked at 190 for 5 hours (2 lb piece).  Since it was already an hour past dinner time I sliced it instead of doing an FTC.  A little too rare for my taste.  :P FTC might have resolved it but I opted to finish for a couple of minutes in microwave.  By doing so, the plate filled with juices (should have made some fries to soak in the juice).  :D Nuked until medium.  Taste was heavenly, tenderness was great except the thin end.  Rain held off until the smoker was cleaned and put away.  Next time I start a little sooner,  go to 150 to 155,  and FTC for a couple of hours.  I got to write this down cause I think I got this one nailed down.  ;D
