SL, I don't bake our mac & cheese.  I make a cheese sauce with Velveeta and milk on the stovetop.
We have smoked Velveeta and made a cheese sauce with that for mac & cheese.  It has turned out pretty good.

In the summer months I am doing all of my baking on the Treager. Casserole's, Tuna Noodle, Mac & Cheese, Chicken & Rice, the works. The convection cooking gives it just a kiss of smoke flavor. And yes I do use Mesquite at times!
