I made some... But I think it's still in the freezer. Never had time to do anything with it after I cured/smoked it, so I vacuum sealed it and tossed in the freezer.

KFC Coleslaw recipe from a "Top Secret" cookbook. ;D
2 12 oz bags Dole shredded cabage
2 Tbl minced onions (I use reconstituted Penzeys white dehydrated onions)
1/3 cup sugar
1/2 tea table salt
1/8 tea black pepper (I use 1/4 tea)
1/4 cup milk (I use skim milk)
1/2 cup mayonnaise (I use miracle whip light)
1/4 cup butter milk (I use low fat)
1 1/2 Tbl white vinegar
2 1/2 Tbl lemon juice
I also add 1 tea celery seed
Mix all together, slap on a lid and throw in the fridge overnight.
It will seam like there aint enough wet stuff in there but in the morning there will be. ;)
Stir a couple times before serving and enjoy.

My bow huntin days are over, had a motorcycle accident and got a cable holding my shoulder together.

The pastrami didnt stand out like I had hoped but you could taste it, definitely needs more kraut and I think a little more thousand island dressing wouldnt hurt.
It was mighty tasty though. :o
That Ruben Fattie looks great. I figured when I seen you making it there would not be enough thousand island dressing but you can always put some more on top after slicing. Maybe you can put some thin slices of pastrami on the ground meat mixture before the other goodies then roll it all together? Just tossing ideas around, I love Rubens! I bet it still tasted great. Nice job. :)

I did mix 1/4 cup thousand island in the meat mixture along with the slather on top of the meat.
Partner you did good...I sure think you got a few folks thinkin about makin one of them ruben fatties...lol

The sauce is hot but with the sugar, scallions, garlic, onion powder and thyme it has good flavor.
Its thick like salsa and was thinkin about using it like a glaze on some wings.

The thing I like the most is this stuff has FLAVOR along with the heat, unlike allot of hot sauces I've tried that are just plian HOT.

I put them in a vac bag and nuke them, then let rest a bit, they stay pretty moist.
I hate re-heating in the micro-nuker-thingy.... I have never tried the vac bag trick. Usually when I use that micro-thingy I set the power level on 50%.

They call it the "Meyer's Combo" and its got all the good stuff, pepperoni, Canandian bacon, spicy Italian sausage, hamburger, mushrooms, onions, black olives, green and red peppers, topped with mozzarella and romano cheese.
And to finish it off I top it with a bunch of crushed red pepper.
Brisket or pizza work for me, while both look really good, I think I would prefer the brisket sammie first and have the pizza for dessert....lol
Had a little Beef Enchilada, Chile relano, Rice and beans with a load of cheese and it did not suck and yes I licked the foil pan ;D

BBQ sauce.
Flatten out a biscuit and add a heaping spoonful of pork, top off with some sauce.

Inari - dep fried tofu that is than boiled in a sweet soybased sauce. It opens like a pita and is filled with rice
Tamago - a Japanese omelet, sweet, makes a good desert
Ebi nigiri - shrimp finger sushi
Kamaboko maki - krab stick thin sushi roll

Jim are you telling me that you only used that little booger sized splash of wasabi paste??
Don't need much, only dip the kamaboko (krab) maki roll and ebi (shrimp) nigiri but than again that compartment is all the soy sauce I used so the wasabi was fairly strong.
BTW that is a homemade bento. Picked up the box at the Japanese grocery store. Ran about $10 but makes everything look nice :D

Well I had made some Kielbasi hot dogs so we unthawed a few. I also picked a mess of greens, A spinach mustard green, Turnip Green, Collard green Swiss Chard and Poke greens, Added some bacon grease to cook them in along with some canned hot peppers in oil and garden fresh onions. Cooked them all down. Served them on the side with Kielbasi on buns. Sorry no pics. Got busy and forgetful. My 7 year old grandson ,Wife and I ate them. I was really surprised when my grandson walking away was shaking his head. He had seemed to enjoy it. So i asked what was wrong. He just looked and said nothing. So i asked again, this time he said I was just thinking how nice it would be if my daddy could cook good food like you and and Grandma. I said yes but your mommy does. He said yes but not like those greens and the meats you make. I was just beaming with pride. LOL He spends a lot of time here with his 3 brothers and sisters and my other grand kids. Since both parents work these days. For being so young he always impresses me with his grownup opinions and comments. Got to love all them kids and grand kids. With all the pain I suffer these days I cant help but think if it wasnt for my wife and kids and grand kids I wouldn't be here today! God Bless!

I was really surprised when my grandson walking away was shaking his head. He had seemed to enjoy it. So i asked what was wrong. He just looked and said nothing. So i asked again, this time he said I was just thinking how nice it would be if my daddy could cook good food like you and and Grandma. I said yes but your mommy does. He said yes but not like those greens and the meats you make. I was just beaming with pride. LOL He spends a lot of time here with his 3 brothers and sisters and my other grand kids. Since both parents work these days. For being so young he always impresses me with his grownup opinions and comments. Got to love all them kids and grand kids. With all the pain I suffer these days I cant help but think if it wasnt for my wife and kids and grand kids I wouldn't be here today! God Bless!

No pics but stopped at Pops a small diner here. Around 10:30stopped and done breakfast and lunch a 4 egg omelet with home fries,peppers,mushroom , onions,sausage,ham ,bacon, covered in Melted Cheese and tobacco with sausage gravy on top. Its called Daves omlet, and i only have one every month or two. LOL But they are fantastic.
Have been traveling a lot again, so I have been hit and miss with my Bradley.
Firing it up today for a big Birthday celebration. We have several July BD's in our family so today we are celebrating all of them together.
The unanimous request was Prime Rib....I have smoked prime rib a few times but it has been a while so I had to refresh myself on the details.

Thick sliced tomato, a whole ghost pepper sliced, A banana pepper sliced, Thick slice home made garlic knockwurst on white bread with a lot of miracle whip. had two of them with some Lays chips. Very , Very good! And also quite warm! LOL!

Didn't post the pastrami the other day...so here is lunch. This was made with Uncle Louis pastrami rub. While it is good seasoning, it is not the seasoning I prefer on my pastrami. I prefer Hab's seasoning as it is the more like "real" pastrami taste I like. I will try it on turkey pastrami next.

Original recipe This(my) version
One 6-ounce can black olives, drained large handful
One 6-ounce jar green olives, drained large handful rinsed
2 stalks green onions red onion small dice
1 stick butter, at room temperature 1/2 stick softened butter
1/2 cup mayonnaise no change
12 ounces Monterey Jack cheese, grated smoked pepper jack
1 loaf crusty French bread, sliced lengthwise
Directions
Preheat the oven to 325 degrees F.
Roughly chop both the black olives and pimiento-stuffed green olives. Slice the green onions into thin pieces.
Combine the butter, mayonnaise, cheese, olives and green onions in a mixing bowl. Stir together until thoroughly combined.
Spread the mixture onto the French bread. Bake until the cheese is melted and browning, 20 to 25 minutes.
Also good melted over plain chicken breast or stuffed.

Sorry for no picture. The wife and I had some nachos we made in the oven. Nothing extravagant, just chips, cheese, and Jalapenos. I used an extra layer of smoked sharp cheddar that went very well with the Mezzetta Deli Sliced Tamed Jalapenos. The sea salt and vinegar tasted great with the smoked cheddar cheese. Don't worry about the picture, I will be doing this combo again.

How exactly did you turn that salmon into a spread? Did you start with cold or hot smoked? I have several batches of cold smoked in the freezer and that looks an awesome idea.

Well it's good to see some eating great food, I have been eating nothing but fruit and veggies for the last month.. my sugar was getting out of hand and I didn't want to have to take the pills, so I choose to suffer for a few months till I get my weight down...but y'all enjoy...

Had some monkfish cheek left from yesterday so fried that up aswell.

I guess you could say I had a Bradley forum lunch today. Two slices of leftover meatloaf warmed up on the flat top. Got the recipe from Sonny and Chris. And the Crusty bread from Sandy's recipe last week. Should hold me over until supper.

Trust me it's about fool proof! Just don't Knead it or add flour to it....it's suppose to be a wet sticky mixture.

Hey Pat,
Take some Boudain out of it casing and put in a bowl.
Take 1 egg in a separate bowl and whip it. (whip it good ;) )
Add some or all the egg to the boudain depending on how boudain
you have. You want the egg to be a binder for the Boudain, not a
gooey mess.
Make patty's out of the mix and fry it till semi crisp.
Or
Add a smaller amount of Boudain to several whipped eggs and
scramble it.
Makes either a great breakfast addition or a great breakfast.
