Beef tenderloin was extremely tender....a little too smokey...used hickory...smoked 2 hours.  The recipe called for black and white pepper to be put on the tenderloin after seering and before smoking...too much pepper flavor, as outside was coated pretty good....that would be the change I would make...much less pepper, and maybe smoke for 1 hour instead of 2....can't beat the tenderness...

Sounds like you had a pretty successful smoke. It does usually take a time or on a new recipe to get it dialled in to your own taste preferences. I know I'm always tweaking my sausage recipes trying to make them perfect, most relatives, friends and neighbours all think they already are.  :D

Greg,
As you have noticed we tend to be harder on our food than the folks eating it. Like Mike said you have to try and try again until you get it dialed in to your preference. The xlsx extension is the 2007 version.  Microsoft does have a patch for the older excel versions that will allow them to open the newer spreadsheets.  I'll see if I can find it.  I know I had put it in a post when Marc first put the spreadsheet on the forum.
