Title: vacuum marinating

I've heard that vacuum sealing meat with marinade speeds up the process and makes it work better.  Does anyone have an opinion on this subject (yea I know dangerous question regarding "opinion").

Several members use the Reveo tumbling marinating system which is a vacuum process.  NePaS will most likely be along shortly to fill you in on the details.  I know he uses his on a regular basis and is quite pleased with it.

Hi kiyotei

Ky is right. I us a Reveo for marinating. It takes 5 to 20 mins instead of 8 to 12 hours. Most of the new vac sealers have different settings for dry and moist sealing. If you have one of these you can vac marinate or use their vac containers. Put your meat in a glass flat pan with your marinade, place 2 paper towels just in front of the pan but leave the bag seal area free to seal. The paper towel will absorb the marinade before getting into the seal area. Note this is a liquid marinade. You can use a dry marinade such as High Mountain or your own in a vac seal bag but it just wont permeate the meat like a wet marinade.

I always use a vac sealer for marinating.  I believe it's alot faster and pulls the marinate into the meat farther.  I use it with dry rubs also.

Try vacuum marinating shrimp in tequila, wrap in bacon, smoke for 2 hours at 210 then cook a 240 until bacon is crispy.

sounds like I will do the vacuum marinade more often now that I have a machine.  It has a marinade button so will give that a try.

I have two cornish game hens in a vacuum (foodsaver canister) brine.  Wanted to see how a 5 hour vac brine would work since I didn't make the brine yesterday.

Hey All,

My new Foodsaver came with a "Vacuum container" that is supposed to be used for wet marinades.  Haven't tried it yet, but the concept seems viable.

I use mine all the time for that.  Works Excellent for that
