Title: Smoking Kokanee

I have just purchased my Bradley, seasoned it and am now ready to get started.

I have not been able to find info on smoking kokanee with a Bradley.  While they are a salmon, they are the size of trout (12-18 inches) and will be smoked filleted, not whole.

Can anyone give me some help here, starting temp, smoke duration, temp changes, etc.  I have a good brine, just need help with the Bradley.

If you haven't done so already, would suggest you check out our recipe website. 

The web address is www.susanminor.org  Once you have entered the website, click on our tested recipes.  There you will find a section on smoking fish.  That should put you on the right track.

Here is the recipe and times that I used for kokanee.  They turned out excellent.  I tried to follow the times and temps that are stated in the recipe.  I used 2 hours of apple smoke.  I was very happy with the results.  I must say kokanee are very good eating!!

I only knew of Kokanee as a beer and was trying to come up with a line that good.  I didn't but can now stop trying.

Coleman--I haven't had smoked kokanee since I was a kid. For those of you not familiar with the fish--they are basically freshwater sockeye-that beautiful red colour says it all. I still remember fishing a lake in the interior of BC when we were on holidays when I was a kid. This native kid came along and offered to swap some of our fresh for some smoked product. Since we were on the road, my dad went for the deal. The kid took our fish (in a sack on his bicycle!) and came back 1 1/2 days later with some smoked in exchange. I can still taste those fish... Where did you catch yours Coleman?

I was up in the Interior of BC as well.  There's a few lakes with them in it up there, and I believe they are stocking them in some lakes as well.  These were the first kokanee I've ever caught, and I had a good time fishing for them.  Hopefully I'll get after them again.  And hopefully they open the sockeye season this year down on the fraser river.
