Hello everyone, I'm new to the forum and new to Bradley Smokers. I live in Pennsylvania and have a Bradley digital 4-rack. Just did my first smoke, attempting Texas barbecue using a 14.2 pound packer cut brisket, and had some issues with the finished product. I'd like some critiques of my process.
