Title: Bacon Mistake Question

I accidentially left two slabs of bacon in the fridge for 2 weeks.  Just remembered they were down there today.  My question is do you think it is still good or should I get rid of it.  I was using the basic cure substitute for tenderquick.  Hopefully it isn't ruined.  Any help is appreciated.  Thanks.

I think it will be fine. It may be a little salty so I would probably soak it in fresh cold water for about 1 hour, changing the water after 30 minutes. Once you have done this slice off a couple of pieces and fry them up to check to see if it's still to salty. If it is repeat the process and fry a couple more pieces. I'm sure it will be fine. I've let some of my bacon go 2 weeks before as well and as long as I soaked it, it was fine.

Mike has set you in the right direction -water soak. Might take more that one hour's worth, but it's not ruined.

I have taken a few slabs to two weeks even a little more with no problems.  I usually soak for about 2 hours though, changing every 30 minutes.

I agree.

I have cured meat that long with no problems. It just takes a longer soak
