Two friends of mine over at my grill forum shared these dip recipes. They sounded really good so I thought I'd share. Enjoy[:p]
Dizzy Pig Chicken Dip
2-8z pkgs cream cheese (NOT fat free)
1 cup chunky Blue Cheese Dressing
1 tablespoon (+or-) Dizzy Pig (your choice)** (Firewalk or Tsunami Spin?? or your favorite rub)
2-4 oz your favorite hot sauce (+or-)**
2 cups of previously bbq'ed/smoked diced, or shredded, chicken breast or thigh
8 oz Colby-Monterey Jack (or Mexican style) Cheese
Melt ONE cream cheese at a time on medium heat, stir in BC dressing, Dizzy Pig and the hot sauce. Remove from heat and add chicken. Pour into a pan and sprinkle with the cheese. Bake at 350° for approximately 25 minutes. Serve with corn chips,crackers or tortilla chips.

I thought this one sounded good since smoked chicken breasts have been a big topic lately[;)].
Smoked Catfish Dip
8 oz smoked catfish
4 oz cream cheese, softened
2 tbsp butter, softened
1 1/2 tbsp half and half
1 tbsp onion, minced
1 tbsp water chestnuts, minced
1 1/2 tsp brandy
1 tsp fresh lemon juice
1/2 to 1 tsp Raging River rub(or your favorite fish spices)
1/2 tsp worchestershire
1/2 tsp Tabasco or Louisiana Hot Sauce (or your favorite)
Salt and fresh ground black pepper to taste
Flake the catfish and put into a small bowl. Add the remaining ingrediants. Mix together by hand until well blended. You can use a food processor, but the dip will be more homogenous than if you do it by hand. Just depends on your preference. Serve with sliced cucumbers, celery sticks, crackers, or bread.

I think pork would work equally as well. Here's a bowl of the dip I did up yesterday. I used the Jamacian Firewalk rub and it spiced it up real well but not to hot.

The Jamaican Firewalk rub is terrific. Did up two BBs for pulled pork this week (hence my previous question), one with Swamp Venom and the other with the Jamaican rub. Both were excellent [:p][:p]!

Are these commercial brands or are they in Smoke and Spice?
They are Dizzy Pig Rubs that he sells. Haven't tried any yet, but supposed to be pretty tasty.
