Title: Couple of questions before I buy a new Bradley
Post by: kaz on May 17, 2009, 07:02:16 AM
GREAT FORUM!!!
You guys & gals are really passionate about this stuff!!
I joined this morning and can't leave this site!!!
Fast forward: Burned up my cheapo can-style electric. Started checking with friends, found a guy with a Green Egg and a Bradley ........ it's going to be a Bradley ..... learned here about a PID, this morning. My needs are reasonably basic stuff. So ....... I'm thinking the OBS (see I'm already using abbreviations!!!) with a PID instead of a DBS ...... 4 rack ...... probably stainless.
Is the OBS/PID combo better than the DBS?
Bubba pucks?
Best $$$ I've seen is on Amazon (excusing eBay) for a warranty & price & free shipping.
Any thoughts / recommendations /advice?
thanks from a BRAND NEW MEMBER!!!

KAZ let me be the 1st to wish you welcome aboard!!  :P
And yes the obs/pid is a better choice than a dbs the temperature will be more constant you'll see and you'll save some $$.

And the bubba pucks are aluminium pucks that's allow you to end your smoking cycle (you'll need 3 of them) you really can not use your obs without it you'll see.

Hope you'll enjoy your time on this forum ITS BY FAR THE BEST ON THE NET AND I MEAN IT!!

Welcome Aboard Kaz, For Starters the OBS with a PID would do just fine I have the 4 rack Digital. I see your excusing Ebay for a warranty and price and free shipping. The warranty comes with the Bradley no matter who sells it. Price well I will leave that one alone. Shipping, If I remember right a couple of members here have free shipping as well. If your on the East Coast, Bryon at Yard and Pool will give you a good deal AKA: Begolf25 around here, Then there is West Coast Sausagemaker (WCK) on the Weat Coast and in the Central (Iowa) there is Tiny Tim. What better support system could you get than from all the wonderful, colorful Folks right here on the forum. Just ask and it will be answered.

Hi kaz - I'm a newbie here and just made my purchase on Friday. I'd been watching this one on ebay from the Bradley Store. It's a 4 rack stainless OBS currently at about $200 with $55 shipping. It ends in 5 hours so it will certainly go up. But that has the potential to be a great buy.

Thought I'd mention it since you are looking...

http://cgi.ebay.com/ws/eBayISAPI.dll?ViewItem&item=280343095034&_trkparms=tab%3DWatching

I went with a black OBS. I haven't purchased the PID yet, but plan to soon. I ordered bubba pucks yesterday and wish I'd gotten them sooner.

ETA: Forgot to add, the ebay one comes with a free box of bisquettes, your choice of flavor

Thanks!!!
The concerns I have with this auction is the issue with shipping from Canada. Impossible to track once it clears customs ......... but thanks for the heads up.
AMAZON appears to have the best deal , shipping included.
Will likely wait a few says for a few more tips before I order.

Understood. I was going to go through Amazon as well since I used their 'prime' service. Shipping would have been included. Then on Friday I decided not to put it off anymore, went to my local Gander Mountain and bought it off the shelf. It cost me an extra $30 but I'm currently smoking a pork butt and enjoying every minute of it!

Toker,
the programmable pid lets you program your cook
from 1 to 6 time and temp settings.
for example you want to cook for 1 hour at 150 degrees and then ramp up to 200 degrees
for 2 hours, and then finish at 250 degrees, you can program the pid to handle all of that for you.
no fooling around with the temp control on the smoker.
just one of the accessories that make things a little nicer.

Either will be fine.  I have the stainless.  Went with it because I live in a humid portion of FL.  Do not know why I bothered since I keep it indoors when not in use anyway.  Still, the exterior looks nice and shiny and gets the attention of anyone visiting.

Welcome to the forum.

Mr. Kazman...stainless, in my humble opinion, is a vanity thing if you are commited to the OBS...heck you cover it up anyhoo when you're not using it...but if you like that...then spend the dough...the unit works the same in whatever color you choose!!  :)

Welcome to the family!!

Toker;

You have a fine temperature control device. Although you can't program it like a programmable PID, you have the ease of use just to sit any wheres within two football fields and change or monitor the your temperature at any time. If I couldn't have both features, I would rather have that one.

I was going to make the ProComm 4 one of my toys in the near future. I see they just released the  Cyber II  (http://secure.thebbqguru.com/ProductCart/pc/viewPrd.asp?idproduct=289)on the market. Now it's a hard choice, the ProComm 4 gives you more mobility, the remote for the Cyber II is your PC or some other hand held device that can access your wireless network. I think I'll send Shotgun Fred a suggestion to add a remote (like the ProComm 4) as an accessory.

Do you have a Cabelas retail store near you?  If so and you want to shop locally and avoid shipping issues, some Cabelas retail stores have the Orig 4 rack model on sale for $274.99 till May 25th.  That is the route I took last year and have been happy with the results.

As far as advice, read as many posts on this forum as time permits.  This will allow you to get good results the very first time.   I've been doing that for a while and appreciate the time other members have taken to share their knowledge.

I'll check the Cabela's web site --- THANKS (again) to all that keep adding more GREAT info to my brain.
The friend that introduced me to his Bradley (and his Green Egg) mounted his DBS on a rolling appliance dolly and it REALLY works great for easily wheeling it in and out of it's storage spot. I already have one I purchased (cheap) at Harbor Freight (another G R E A T shopping place if you've never been there and are a tool junkie like me). It's a rectangular frame of hardwood with carpet strips at each end and sits on strong casters. Mount a pan typically used for water heaters or furnaces underneath with oil absorbant granules and aluminum foil and you have a really slick little full-time cart that can be wheeled out onto your driveway with little chance of leaving a stain!!!
Since I haven't read the instruction booklet (cuz I don't own one yet) --- what is the deal on using extension cords?
Thanks, again, EVERYONE!!!!

Kaz .... The Cabelas promotion appears to be for in store only.  The online web site is showing $299.  However you can use the website to view the advertising flyer for a particular store.  Do you have a store near by?

No Bruce, I don't ............ but another person from this site recommended "Tiny Tim" and sent his e-address ..... I dropped him an email ....... shared my shopping list and BAM ....... he's about to sell me my new OBS. I'm also using the money saved from NOT buying the stainless digital (my original plan before this forum) and ordering the PID and a set of BubbaPucks!!!!!!
Hell, I didn't even know what OBS or a BubbaPuck or a PID was 2 days ago!!!!!!!!!!

I have my base set up for the roll-around platform .........
Mt NEXT set of questions will surround recipes and techniques.
I tried to register at the recipe website but have had no luck getting recognized ..... maybe it takes awhile.
I REALLY want to try the Cabritas I saw everyone raving about, Salmon, and pork Butt .... NONE of which I've EVER smoked!!!
SOOOOOOOOOOOOO THANK YOU, all (y'all) for your G R E AT HELP!!!

Not being picky or anything and it was probably just a misstruck key, but you probably mean carnitas - cabritas is a completely different animal or something that goes pop in the microwave - literally!

But if you want cabrito, we can help with that too.

You're right (my bad) but actually I love Cabrita (goat) ........ and as much as I'd love to try making it .... 2 things are against that happening: 1) Mrs. Kaz is a picky eater and goat aint on that girl's list 2) Krogers (around here) dont sell goat ..... or at least don't mark the packages as GOAT!!!
I meant Carnitas ....... and I love Carnitas!!!! So I will try that early after getting my OBS.
Now .............. anybody got a really authentic recipe for Guisado?
I'm afraid of offering ANY recipe to the pro's on THIS web site ..... you guys wrote the book!!!!!!!!

Now that is funny

Quote from: kaz on May 19, 2009, 03:26:45 PMNow .............. anybody got a really authentic recipe for Guisado?

I like this one for Guisado Verde.

This I make in a crock pot, not authentic technique, but tasty and carefree.

2 tablespoons vegetable oil
2 pounds boneless pork shoulder
1 large onion, coarsely chopped
3 cloves garlic, chopped - I usually use more
2 (12 ounce) cans tomatillos, drained and chopped
2 (7 ounce) cans diced green chile peppers
2 fresh jalapeno peppers, sliced
1/2 cup fresh chopped cilantro
1 teaspoon dried oregano
Dash of Cumino
salt and pepper to taste
1 quart water -or chicken broth
1 cup shredded Monterey Jack cheese
1/4 cup sour cream
Sprigs fresh cilantro, for garnish

Heat the oil in a large skillet over medium heat, and brown the pork on all sides. Reserving the juices in the skillet, transfer the pork to a slow cooker.

In the skillet with the pork juices over medium heat, saute the onion and garlic about 1 minute. Transfer to the slow cooker, along with skillet juices.

Mix the tomatillos, green chile peppers, jalapeno peppers, and cilantro into the slow cooker. Season with oregano, cumino, salt, and pepper. Pour in 1 quart water or broth, or enough to cover all ingredients. Cover, and cook on High for 6 to 7 hours.

Shred the cooked pork with a fork. Spoon the slow cooker mixture into bowls, and top with Monterey Jack cheese, sour cream, and fresh cilantro sprigs to serve.

BTW, just noticed your location.  30 years ago next month, the wife and I spent our honeymoon in the Arlington.  Loved those hot baths and massages!  And the Arlington had some sort of Matre' de butter that was out of this world good.

REALLY liked it and bought a piece of land ............. a few years later ........ cashed in our chips ..... and voilla!!!! we're Arkansans or Rednecks or whatever the joke of the day says we are !!!!
And then I discovered this goofy website full of really interesting folks from what looks like EVERYWHERE and I'm getting recipes, and buying tips .......... this is a great world!!!!!!

The moniker CaneyScud started a few years ago when I joined a fly fishing forum.  Had been going under the username 40something and would change it each year to 41something, 42something... etc...  Wanted something different that addressed my like of fly fishing.  My "home waters" are the Caney Fork River below Center Hill Lake in Middle Tennessee.  All the usernames that I could come up with, with Caney in them were already taken - so I thought what were the main food sources in the Caney.  Some of the more glamorous ones were taken, but then I thought of the bottom dwelling, lowly Scud, this little non-descript, plain jane, sow bug, shrimplike creature - seemed to fit plus it wasn't already taken (and I just happened to have some in the tying vise), so Viola' - join the two - CaneyScud

BTW, you got any buddies in the Ouachita whetstone business.  Looking for a hard white and a good black stone.

I'm an Aggie so I understand the joke of the day concept!

Caney,
Find somebody with an old Black Slate pool/billiard table. I have a couple Blk stones from when I worked in the Packing House and that is what they was cut out of. Work really really good.
