Title: Question on ribs
Post by: Crimson Ghost on May 23, 2009, 04:15:00 AM
I have read a lot of older posts regarding ribs on this forum.  Most say to smoke for 3-4 hours at 180-200 then transfer for a few more hours in the oven.   But the Bradley recipe says to smoke for 4 hours at 200 and serve. does the additional cooking in the oven make them more tender ?

Doneness is often a matter of opinion.

Only you know how tender you like them.

The longer you cook them, you more tender they will be.

Is the Bradley recipe for baby backs or spare ribs.  Baby backs are routinely done in four hours at 225.  Spare ribs on the other hand need more time.  Baby backs are naturally more tender and a smaller (less weight) cut than the spares.  I might have done some spares as quick as four hours, but generally they need more time to properly break down.
