got a couple of butts going today.
a local grocery store had bone in butts at .98 a pound so i bought 10.
average is 8 lbs a piece.
i injected the one on the right with Dat good mop (just for fun)
then rubbed it with my dry rub.
the other one was injected with creole butter, rubbed with CAM and then my dry rub.
the one on the left is the mustard one.

Looking Good UIS
I have had such good results with the creole butter injection on the large butts, 9 or ten pounders. It seems all of that extra cooking time is neccesary for it to do it;s job. If I do a 5 pound butt it does not seem to ahave any effect. Not too sure why. :o

Where else but Tennessee would you find a Piggly Wiggly shirt? Wrong part of the state though! Since Piggly Wiggly started in Memphis, I suppose that is the reason - Memphis is so crazy over smoked pig meat. Proven by Triple D this weekend - At least 2 shows on Memphis BBQ - Pulled pork with cole slaw on top, smothered in a sticky sweet BBQ sauce!
