Title: Extra butt
Post by: JimmyDreams on June 09, 2009, 04:40:40 PM
I'm smoking 2 butts for a party this weekend, but at $1.28/lb, I got 2 extra. I CAN smoke them and pull them now and then vacuum seal/freeze the result... but that will be a lot of work. Or can I freeze the butts themselves and smoke them later?

Suggestions on which is best?

Thanks!

Jim

If you decide to smoke now, freeze them whole and pull after you thaw and reheat - you lose less moisture that way.

Both ways work fine. I like to freeze my pork for at least a week to make sure there is nothing nasty in there.

I've also made extra pulled pork and vac packed them for some other time.

Either way your good!

Thanks....wasn't sure if freezing would do something strange to the meat. I'll freeze two, smoke and pull two for this weekend, and do the others whenever I feel like it.

Also, got a slab of pork ribs, so they're on the list of things to try VERY soon! :)

(sucks to be me, eh?? lol)
