Title: Fajitas
Post by: westexasmoker on June 10, 2009, 08:30:21 AM
Felt like some fajitas for last night, did'nt have any skirt steak so settled for 3.5 lbs of round steak.  After a night in the fridge with bona fide marinade, resting while the smoker comes up to temp.

1 1/2 hours worth of mesquite smoke

Then off to the grill for a quick sear on both sides

Grilled red, yellow, green bell peppers, onion, jalapenos some diced tomatos and green chilis.  Sliced the meat.
