Title: Beef short ribs...

Well, it's that time of week again, Thursday delivery's at my local butcher.  Decided this weekend called for some beef short ribs....  it was wonderful, the guy grabs his saw and says "Follow me...." and leads me into the cooler.  Now, I know it sounds like a scene from a bad mob film (and a few good ones too!)....  but it was pretty fun, and I managed to survive.  I got to choose my side of beef and he cut the ribs I wanted off right there and then....  I was SOOOO tempted to get LOADS of them...  but restrained myself to 1.5kg... or just over 3lbs.  Can't WAIT to do these Sunday....

Trimmed of excess fat and separated into individual ribs...  it's hard to tell, but these are about 4 inches long, and the meat thickness is around 1.5"-2" on each of these babies!

And not previously frozen a dozen times through shipping.  Gotta love the direct access.

Those are going to be really good, must be nice to get them that fresh.

I would truly love to find some beef ribs that have never seen a freezer or cryovac! Please post a pic of the final cook. I can remember getting cuts of Beef Ribs like that in the midwest, but not in Cali.
