ive had my dbs6 for about a month or two now and have done several excellent smokes. ive done pork butt 3 times, baby back ribs 3 times, whole chicken once and spare ribs once. the spare ribs were great, especially since a local store sells them for .79 a pound. they cut them st louis style, but keep the stuff they cut off in the pack, so basically im paying for a whole spare rib thats cut up. ive read somewhere that taking the membrane off of spare ribs is different than baby backs, but i didnt understand what it was talking about. it said something along the line off taking part of the membrane off, but leaving the rest so the bones wont fall out. i must have did it wrong because the meat pulled back on one side off the bone about 1 1/2 inches but didnt pull back on the other side of the bone at all. the meat was great and i couldnt even pick the ribs up by the bone because it pulled out without any effort. so my question is do you pull the membrane different on spare ribs and babybacks?

I pull the entire membrane off of both cuts of ribs.  No difference in my book.  Taste and how well you like the ribs is really all that counts anyway.  For smoking, it isn't necessarily the journey that is important but the final destination, your taste buds.

Membrane comes off on mine also.

I've pulled membrane on both.  Sadly, I didn't know this until the forums and it is night and day difference.
