Quick question,
Is it ok if I smoke baby back ribs and pork spareribs at night say for 3 hours, move it into fridge, then finish it in my house oven for 4 hours or so the next morning so it'll be ready for lunch time? Would it make the ribs any less tasty, dry, tough (meat not coming off the bones easily), etc? If it makes no different than finishing it immediately after smoking, then I would do so. I do not want to wake up at 5am to start smoking the meat :)

Have not done ribs that way, but theoritically it would work. I've done a brisket and a butt or two for various reasons that way. Mainly short barbecue contests that allow for pre-cooking. They've turned out fine, but ribs can be pickier. Never know till you try! But don't try it the first time with the in-laws coming over with all that pressure and need to succeed! It would probably be best to get the temp up on them on the second cook as soon as possible and then reduce the oven/cabinet temp. to 225-250 to reduce the reheat time and drying out. Its time in the magical fat melting/collagen gelifying range that is important not the heating time. Probably better to do spares as they are meatier/bigger/fattier.
what if I smoke and cook it to finish tonight and then reheat it the next day for lunch? would that work better?
If so, what is the proper way to reheat ribs? Just boat it, use a little apple juice, and heat it at 220F? or higher temperature?

I take ribs to lunch all the time. Usually 3 cut ribs re-sauced and vac sealed. Poke a small hole to vent and into the micro. Keeps them nice and moist.
I occasionally do ribs the day before, then bring them to room temp before I want to serve them, slap on a bit of sauce, and throw them on the grill long enough to heat them and finish the sauce. Works fine.
Looks like I'm gonna cook to finish at night and reheat it the next day for lunch :)

I do the same as SS with ribs and chicken.
Works great when your camping also.
Just thaw and throw on the grill.
When I do my ribs for company, I always do the day before, wrap in foil and warm-up on the BBQ when all arrive.
Its much easier for me and I can drink more ;D
