Hi Everybody,
Just wanted to share a recipe for a fresh venison/pork breakfast sausage that came out great and my family really liked.
4 lbs ground venison
4 lbs ground pork shoulder
2 Tbsp salt
2 Tbsp ground black pepper
3/4 tsp ground mace
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/2 tsp ground allspice
1/2 tsp garlic powder
1/4 to 1/2 tsp cayenne pepper
1/2 cup cold distilled water
Make into patties or stuff into casings, I used sheep casings to get that breakfast link size.
This is a fresh sausage with no cure so make sure you either use or freeze it within 3 days.
Carolyn
Another recipe that I can add to my must try out binder.
Thanks Carolyn
Lumpy
