Title: Canada Day smoke

What's in the smoker for the big July 1st birthday party tomorrow, Canuckleheads? I am doing a yardbird and maybe some oysters in between working on my house renovation. I hope you and yours have a great day. We are lucky to live where we do...

Same same, although we didn't revolt against the Brits--we're much too polite for that. We just asked if we could please leave. :)

I love the 4th of July in our house!!! I get to celebrate our over throw of the Brits!!! My husband will unfurl the Union Jack...he just curls up in the corner...he gets over it soon enough!!!!  :D I just hum the National Anthem all day and then feed him...he bounces right back!!!  :D  :D  :D

I am doing a few rainbow trout, some ABT's, Bacon Wrapped Chicken Breast and maybe some Turkey Jerky. But I have two days to do it all in.  ;D We are closed on Thursday also. I might even do a few pounds of Almonds also.

is that anything like boxing day? .... just kidding but anyway im doing 14 lbs of pork butt on thursday night  and into friday  then pull and saturday morning put into a slow cooker and cook in bbq sauce till  we leave for picnic at 1

Well, I'm too tired after jackhammering and hauling rubble out of the basement to fire up the smoker. It'll be grilled pork chops, new potatoes and salad for tonight. (Plus some Phillips IPA and red wine) Have a good Canada Day!

I did a Brisket in the smoker and we had corn on the cob and tater salad. Also consumed a few lagers on the deck and later on a couple of rum'n'cokes. A little foggy this morning.

I missed my Canada Day at home this year since I am spending the summer in Colorado. I still did celebrate with a shoulder in the smoker (sorry no pics, too busy eating ;D) and on the 4th I will enjoy the local parade and smoked treats downtown.

Gotta admit, you Yanks sure know how to do a party. The town that I'm in closes the main street, a Coors 18 wheeler parks on the main drag and taps are screwed on to the side of the trailer and let the suds flow! Everyone walks around downtown with a beer in hand, smoked turkey leg or smoked sausage in the other.

Ok...I have done the research and have been given this info...

1. The beaver tail appears to be a sweet and savory dish that has both a little kick and sweet...

2. I think Sid is a Canadian hockey player with the Penguins (but he's a pup at only 22).

3. Santa"s Address is something like:

Santa Claus
North Pole
Canada
Hoh Oho

But...I could be wrong about all of this.... ;D

Smoker doing its thing while I am getting ready to have a well deserved wobbly pop.


The day started at 5 am taking the fish and the chicken out of the brine and ended at 6:00pm taking the chicken breast out and taking them and the jalapenos over to our friends to have dinner around the pool. The wife drove home, I was just too tired after a day of cooking. :D

It was a long day. The most I have smoked in one day but well worth it. I think I will do it again. Good way to try some new recipes along with some old ones. Everyone like the food. Our friends son could not get enough of the stuffed Jalapenos and I leave alot of membrane and seens in the peppers. He now is an official chilli head.

Hey LQ--2 out of 3 ain't bad!! As Giz said, a beaver tail is a sweet confection made out of fried dough. Giz--you too got 2 out of 3, falling down with Santa's address. (Well, who the heck knows, really--he probably only keeps a mail service their and winters in Mexico with the rest of Canada)  :D 
Hope you guys had a good holiday this weekend. We watched the fireworks from Washington State across the strait last night.

Nah--We'll let you and Giz in! You have the right 'tude. I'll even send you a genuine north woods moose call. Careful though, there's been a few moose sighted just north of Desert Hot Springs, and drunken use of the call could lead to trouble!  :D
