Title: Old School Chuck

Ran out of bisquettes  :o (got some on order), but had a chuck roast begging for some smoke so had to go old school and fire up the offset.....and yes of course with mesquite logs!  ;D

Simple rub of salt and pepper, resting while the logs get burned down.

Into the smoker

After about 10 hours pulled when IT temp hit 145 then FTC'd for a couple of hours.

Great looking "Old School" Smoke Ring WTS!! I know it doesnt taste any different but it looks good.

Now, you gone and did it!  There's been some hints that we need to eat up all the sausage and other smokies I've done (lots of leftovers - yummy) before I can conjure up more goodies.  But that has inspired me to chuckiedom and has given me the bravery to risk the sharp saber of condescending lip service.  It doesn't hurt as long as the memory of smokey goodness lingers!    Thanks WTS!
