I had an old Excalibur dehydrator fan assembly sitting around. I mounted it inside my smoke box. This will help move the air and smoke around when i cold smoke jerky. It a 600 watt heater coil and a 5" fan i'm thinking maybe 4 to 8 cfm.
Tomorrow i am going to make some SA Biltong.

I dont think so. No moisture in the box. I dont use water in the pan when doing jerky or sticks.

I love biltong, and made it a few times. Do a search, you will come up with several recipes, and instructions on how to make a biltong box, but a box is not needed.
