hello everyone. hope your summers are going good. i am making about 10 racks of spare ribs for my in-laws 40th in a few weeks. and would love some sugestions for a good rub. i have heard the iceman has it nailed down but hard to get these days. so any help would be great. i am smoking them the weekend before and will reheat them for the day, so i will just use sauce as a side to dip into, plus i kinda like dry ribs with a good rub anyway.

Don't really have a rub recipe. But what I like to do is use Paprika, Garlic Powder, Onion Powder, Cumin, Salt, Pepper and Cayenne Powder. Just sprinkle on to taste and rub in. Try AL Roker's for starters. This is where I started. Just modify after that until you find what you like.
Al's Rub
Recipe Courtesy Al Roker
1 cup brown sugar
½ cup ground black pepper
½ cup salt
½ cup adobo
¾ cup paprika
¾ cup chili powder
2 Tbl. Cinnamon
2 Tbl Allspice
Mix all ingredients together and store in airtight container.
For Bolder ingredients
¼ cup ground black pepper
¼ cup white pepper
¼ cup salt
6 tsp celery salt
3 tsp hickory flavored salt (can omit if you are smoking)
6 tsp celery seeds
6 tsp garlic powder
6 tsp onion powder
1 ½ tsp cayenne pepper
1 Tbl Coleman's Mustard

Here is the rub that I used in the tutorial and is my go to rub.
General Purpose Rub Recipe
Mix together thoroughly the following:
• 1/4 cup dark brown sugar (packed). Use "turbinado" sugar for ease of use, but either works fine.
• 1/4 cup sweet paprika (Hungarian, if you can get it)
• 3 tblsp kosher (or sea) salt
• 1 tblsp ground pepper (fresh peppercorns recently ground!)
• 1 tblsp garlic powder or 2 tblsp granulated (not garlic salt)
• 1 tblsp onion powder
• 1 tblsp chili powder (no, it will not be "hot")
If you want to kick it up a notch add 1 tblsp cayenne pepper.
Store in a tightly sealed container, and refrigerate, to maintain freshness, for up to 4 months.
