Title: Smoked chops?
Post by: dilly on July 04, 2009, 05:44:42 AM
Anybody here cure and smoke pork chops?  I have some nice venison "butterfly" loin chops that I may experiment with and try curing and smoking.  I just don't know how long they should cure for.  I intend to use the same cure mix I used with the turkey legs and was thinking around 4-6 hrs.  I welcome any input.

I found a recipe on another site which explains the whole loin is cured, then smoked, then chopped to make the smoked pork chops that I know and love.  I guess this fall I will have to leave the deer a bit more intact.

Ditto on the cured chops from the websight, I have done these many times. They do have to be dried to the point they are a little tacky or they will not get the beautiful golden brown color they deserve.
