When out and picked up a "Choice" brisket yesterday. Last night when I was getting it ready for the smoker I could have kicked myself. It was select. Grrrrr!

Used a number of selects in years past, when it was very hard to find a brisket in Nashville. Really haven't found out that much difference except maybe a little less fat.
