Hi there all,

I keep reading all the good stuff about your experiences and experiments and I dont get my BDS till the 15Th which I wish were yesterday. But believe me once I get it, I shall be bombarding y'all with all sorts of questions and resquests of assistance

I would be curious as well I scored one from my brother and don't have a clue as how to smoke the thing yet. He got a whole lamb as payment from a Amish family for Chiro adjustments.

Hi there Lumpy,

when I placed my order and since I was buying from a UK based agent for the BDS, I decided to go ahead and order what I could since it is going to be shipped anyway. So I order the 6 racks BDS, the cold smoke attachment, the weather proof cover and 12 boxes of various wood flavors (120 bissquettes each) plus I get and extra box for free that came with the smoker. I have already purchased the  Maverick remote digital talking thermometer and the BABA pucks.  I think it is a bit early for sausage making for me but do you think that I would need the PID, what do you think? I have been reading the the BDS is very good about keeping the desired temperature (+/- 5).

I have also read that electric smokers, in general, fail to produce the infamous (smoke ring) due to the absence of what is referred to as "infusion" but I have also learned that if you add a couple of burned charcoal briquettes in the smoker you could overcome that. Has any of you guys done that and if so what was the results?? Please let me know.

Sounds like your on the right track. You may want to smoke for a few months before you think about a PID. Here is a thread pertaining to the PID

I've had no problem obtaining a smoke ring on meat. Never heard of the problem that you mention regarding electric smokers. Also never heard of adding a few charcoal briquettes. Some of the more experienced members might be able to answer that one. Personally though............I would'nt think about messing with the way my BDS produces its smoke.

The BDS can have some interesting temp swings. A few things to remember, preheat to a higher temp, do not put very cold meat in the smoker, think about putting a brick in the smoker to keep your temp.

Don't forget to season the baby before your first smoke.

You are correct. You can not get a smoke ring from an electric smoker. The ring is a phenomenon that is created when organic fuels; such as wood, charcoal, natural gas and propane, are used to cook with. These fuels produce traces of nitrogen dioxide gas that dissolve in the meat surfaces and cause the myoglobin in the meat to turn red. Similar to what occurs during curing with sodium nitrite. The smoke ring is not important, and doesn't add any flavor.

I have tried using a few to get the charcoal flavor, but it did not get the flavor I was trying to achieve, and didn't notice any ring. To get the ring, besides using organic fuels, you need to use low temperature (which you are doing) and long exposure to the traces of nitrogen dioxide. I did not use the charcoal for any length of time, if you try it I would use the charcoal for several hours. By the way, you can get this same effect if you slow cook in you gas oven with the meat uncovered.

If you try, let us know how it turns out. When I used charcoal in mine, I first tried placing it on the heating pad of the generator; that did not work. Then I use a small disposable aluminum pan, and put some coals in it. Then I place the pan on an empty rack, in the lowest position.

Welcome to the forum.

Sound like you have most of the bells and whistles in your package. No you do not need a PID many people here get great food without one. I made and use one but I do make sausage and fish so I really want to control the temp swings. I do not know where you seen +-5 degree temp control from a BDS but if that is what you expect you will be dissapointed. Mine without the PID will swing some +-20 degrees F after the meat is put in and it stabilizes, it will get better as the meat comes to temp. Now that is not a problem when doing most smoking, but with sausage and fishes you need tighter control, hence the PID controller.

I am sorry for the late reply but special thanks go to Habanero smoker, Lumpy and Pensrock for their input and insight it is people like them who make me feel that I will not go wrong with my decision to take the plunge into electric smokers. As I said, I will be counting heavily on all the forum members to guide me through my baby steps.

Today is the 15th - have you got your package yet?  We are like expectant fathers with the imminent delivery of a new, shiny Bradley!  Be sure to break in your new baby as the instructions say, then lay on that lamb rack and get it familiar with smokey nirvana.  Smoked lamb is about as good as it gets as long as there is lots of garlic!  We want pics, we want pics, we want pics!

Hi there guys,

I suffered a set back this morning when I was informed by my forwarder that my BDS will not be here until early next week. What is that they say; "Good things come to those who wait!!!" Well I really cant wait but nevertheless have to. I promise that I will fulfil my promises and shall provide picture along with a mouth watering description of how the rack of lamb turned out.

That is a question that NePas can answer. Just when you think you have everything, bam! Something else you need.

Time and experience will determine what "extra" toys you will purchase over time.

Its taken years for the  ;)experienced smoker to obtain all the items needed for our perfect smoke.

My wife asked my what I needed a case of Montecristo's and a beer tap outside. Its all part of the smoke Baby!

As far as toys for your BS, PID, Bubba pucks, many wood pucks, screens for your racks, a good thermometer like Thermapen and et 73 is your call (i dont like em myself) And a bottle of sippin I mean drinking whiskey  ;D

As for the toys you have mentioned, I have purchased the Bubba pucks, 1500 wood pucks, a digital talking thermometer a case of JD but no beertap or Monticristos. But I still got time to punder????? Have you seen these concoctions on eBay; an automatic tap from which you can pour 4 different types of hard liquor? Realy amazing stuff.

I would be interested to hear what you think about purchasing a PID and where do you get those screens for the racks???

I just hope that the day will come soon when I will be sipping JD, sitting on my porch waiting for my digital thermometer to speak up and tell me that my rack of lamb is done. We can start a new topic called "Shine".
It seems like yesterday when my dad and I brewed our first pot of pear schnaps. The stuff was so strong that we were plastered in minutes.I remember him lighting a teaspoon with a match and him saying that the stuff way no good cause there was no flame.
There sure was ;)

We were fortunate to get all the tools of the trade from a local chemist and the rest from the old country. This is making me thristy for a shot and a smoke. I can't smoke up in the mountains (10,500 ft asl) as I can barely breath, will have to wait till I get back to sea level.

one of these days, I gotta tell you about my first experience with shine. It was one of the best I have ever been through. Talking about stereo typing, I have never been more wrong in my life. The best evening I ever spent, was with hill billies from Tennessee.

Man, my day is made - somebody appreciating the Tennessee Hillibillies.  I'm a redneck from Texas, and after awhile I've fit right in.  Some good folks.  Moonshining has changed over the years, I've been here.  Being in construction, I get to see a lot of it, and when I first got here, 'shine was either good or bad.  Good was OK, would give you a burn, but wouldn't hurt ya'.  Now the bad - the stuff that has this fluorescent chartreuse glow - stay away - people get sick.  Had some really cheap vodka like that on a train on a trip in Russia a few years back.  So bad, we wanted to mix it with some juice to try to get it palatable.  All we could find was some Kiwi juice some or our NZ friends had bought at a kiosk.  It was a fluorescent lime green and was wretched enough alone, but when mixed with the vodka was VILE - but it did do the job intended.  BTW, I'd suggest never walking the train tracks in Russia!  When you open the lid to the head, all you see is crossties rushing by.   The newest trend around here in 'shine is two things.  Putting fruit in the jars - strawberry and raspberry are popular with apple right behind - sometimes sugar is added.  The other is aging in oak barrels.  Done right, that makes for some smooth 'shine. - or so I've heard - since I don't drink, all I've ever had is a sip.
