Title: Snack Sticks In 21mm Caseings

I mixed up some 90/10 early this morning before we took our grandkids back to Ephrata, Lancaster County PA. I used PS Seasoning collagen cases 21mm. Going to get 2 hours of hickory tomorrow. They are only 5lbs

Does 90/10 refer to the fat content or 90% beef, 10% pork?

90/10 is the GB to GB fat ratio

90 lean GB to the 10% fat content of the GB
These sticks are all beef this time, no pork cut in them. Sometimes when i make buffalo sticks i cut the buffalo with some 80/20 GB instead of pork. There is a myth that you have to cut with pork? I would like to talk with the pork police and see who made this up......DOH

We are doing just fine, thanks so much for asking. 
I've been just canning and freezing up stuff from the garden but I do want smoke something this week.
Oh, our daughter learned to ride a two-wheeler today!

Thanks for the info on the beef fat ratio, too.
The beef I got from the meat processor this time is probably 60/40 (using my new lingo :D) and I would love to add that to some of the venison snack sticks instead of pork next time around.
I kind of used up my 1/2 of hog that I had in the freezer. :D

Got the sticks finally done. Being i did not hang them i cut the tied ends and some got just a tad dark on the exposed end. No biggie.

I think what we need to do is open a branch of Nepa's store in WI. Could sell his great smoked meats and maybe add in the WI cheese. Might even have to carry some WI brewed barley pops.  ;D
