Title: Stuffed Deer Loin

This is what I call a fattie. Take a loin slice it most of the way through them beat it flat and start stuffing. I used some tomato powder, pepperoni, pepper jack cheese, jalapeno, green onion, green pepper and portabella shrooms then roll in a bacon weave. Smoked 3 hr with pecan at 220 F till an IT of 146 F

Oh Ya I forgot to say I did a pork loin the same way, bet you cant tell which one is the deer and which one is the pork.  :D

That looks real good!

Did the bacon wrap help keep the venison moist ?

Yes it does, thats kinda why I put the peperoni on the inside also.

I bet you ate those awesome looking fatties with some fresh sweet corn to?

I'm fixin a PB&J for dinner tonight, no time to cook  :(

I did pick some sweet corn for dinner

It needs another week but I picked the bigest ones I could find and the kernels were all formed just not big, still tasted good though
