Just Kidding Tourist Welcome Aboard. I'm sure someone that is more versed in the NON-MEAT world will be along to help you out. I haven't got a clue. If I had to take a guess I would say it would be like a cross between chicken and cheese. I would therefore cold smoke the Tofu for 20-40 minutes depending on the size of the chunk. Then place back in the container without the juice, wrap and let rest for a day or two in the fridge. That way the smoke has a chance to soak into the tofu and mellow out.

Yes this was discussed before, I have and probably never will partake of tofu myself but if I were to try to smoke it, I think 10.5 idea is the way I would go. Cold smoke for 20-40 minutes then rest in the fridge for a day or two, then toss out and fry up some bacon! errr use as intended.

Having no clue, this time of year, regarding smoking anything remotely cold...I would venture to guess that a firm tofu would hold up the same as a cold smoked softer type cheese...like a colby jack or a pepper jack.... Of course that would mean... LIVING in a lovely cooler climate...

Slice the tofu thin like jerky, put it in a wet marinade for about 2 hours, put 40 mins of smoke to it and dehydrate it. Makes great vegitarian jerky.

I sampled some baked garlic and herb tofu at our local farmers market and it was really good.
So, I'm not knocking tofu....God knows I have used its distant cousin soy sauce often. :D

Smoked tofu is great and I make it frequently. There is a more detailed thread held further back then the one that Mike posted. For best results get the extra firm packed in water, and freeze it first. I smoke it at 225°F (but you can also cold smoke it), and generally apply 1:40 - 2:00 hours of smoke.

The bacon recipe is good, but you can use that recipe as a guide to preparing smoked tofu for other dishes. Instead of smoking in small blocks, cut it into cubes. I tried making tofu jerky a couple of times and will never try again. It comes out dry, brittle and powdery, not matter at which point you take it out of the dehydrator.
