Title: What the FTC??

Hi,

I'm new to smoking with my Bradley but love it. I smoked some meat over the weekend. Ribs on Friday, Brisket on Saturday (started friday night) I was disappointed with the outcome in it. Sunday I did 2 pork shoulders for some GREAT pulled pork. I'll need to practice more on the Brisket.

My question is what is "FTC" from what I have gathered from the other posts on this forum, it is foiling the meat then wrapping it in a towel and putting it into something insulated like a cooler without ice. Is this correct and what does it do to the meat?

That is correct.

Foil
Towel
Cooler

Place your cooler in the sun to warm it before you place your smoke into it. Once in the warm cooler place cooler in the house.

Welcome to the fourm DZ!

You've got it right Foil_Towel_Cooler....What this does is keep the meat hot for an extended period of time, actually it will continue to cook (raise in IT about 5 degrees), but it also helps pull the juice back into the meat.

Thanks guys!! Kinda feel dumb.. FTC... Foil, Towel, Cooler... Duh! Anyway thanks for spelling it out for me. Lastly what exactly is boating? Is it as simple as making a boat (foil with open top) out of foil? and what does it do? When should it be done?

Hey Dustin!

No such thing as a dumb question here!  Boating is wrapping the meat up in foil to continue the cook, some will add liquid to it also.  I like to use the disposable foil pans, covered with heavy foil.  It basically allows the meat to cook/steam without drying it out.  Hope that helps!

Welcome to the forum. I asked the same questions you did. Great bunch of guys and gals here willing to help out. I am still learning and everyday i see something new. Like yesterday, a new member decided to use a cast iron pan in the bottom of the smoker to retain heat after you open the door. I used a brick or 2 for that. But now i will probably use the pan because it gets alot hotter.  :)

Great Idea!!! thanks for the tip. I've had that problem with the recovery time. I can never decide if I should open the door to check on things because of this issue.

I would not make it an open top. I use 2 layers of HD foil, then an old towel. In a "5 Day"  cooler, I have kept pork butts warm up to 8 hours.
