Title: Chcken Bacon Wrap 1 with homemade cherry bisquettes
Post by: buttburner on August 01, 2009, 05:33:38 AM
After my home made puck experiments, I find myself with an overabundace of cherry pucks lol

So I made the Chicken Bacon Wrap 1 from Old's Place last night, they came out real well. The cherry was perfect for the chicken. The only issue was that a lot of the provolone oozed out of them during the cooking( you can see that in the finished pic), but it was still great.

a few pics, since I know you guys like them

Bet those did taste good. And with a little tweaking (kind of like you did with your bisquettes) bet you will solve the cheese leaking. Thanks for your posts.

I saw something like that on Twitter feed the other day...

"cajun stuffed chicken: chicken thigh stuffed with jack cheese, peppers and onions, wrapped in BACON and then into the smoker"

Here is their pic:

And the final result:

Might have to try that!

Looks excellent ButtBurner!

I've had the leakage problem before too. I find if I wrap them a little tighter/better with the bacon it helps. The last time I made them I used a little OLD Bay Seasoning on the breast and also used pepper jack cheese. I really liked the flavor of them.

I know most folks here prefer a thick cut of bacon for a wrap, but I use the thin bargain packages because they stretch out and wrap tight for more of an even coverage.

actually this was the cheap bacon.

Just have to do a better job of wrapping next time
