Did my first Bacon Explosion and it came out great.
3 hours of Maple Smoke at 225 to get to 165 Internal temp. Very tasty.

The trick to do a bacon weave is let it get to room temp b4 you start. Then lay down a layer of bacon going left to right with the edges touching then lay back over itself the 2 4 6 and lay down a piece going top to bottom on top of
1 3 5 7 then bring back the 2 4 6 and lay 1 3 5 7 back and lay another going top to bottom then bring back 1 3 5 7 and so on and so on

Turducken.....YUM!!! I don't even want to think how long you'd have to smoke that delicacy to get a safe IT!! The trick would be doing it so as not to dry out the turkey. Probably also would alternate apple and pecan bisquette.

I did a turducken roll. It didn't take any longer than say ribs. I took a boneless turkey breast pounded it thin, layer of jambalaya, next two boneless duck breasts pounded thin and placed on top of the jambalaya, another jambalaya spread on the duck breasts, next, boneless chicken breasts pounded thin layered on top of the jambalaya spread. Rolled it all up and encased in bacon. Into the smoker at a box of temp of 250 degrees. Applied 3 hours of smoke and continued cooking until the IT in the center reached 165 degrees.
Search in the poultry area. I think that's where I posted the pics. Look under turducken roll.
