I did up some of your tex mex snack sticks last weekend (the date on the vac pac should be 7-25-09) They turned out great, kinda taste like some i have made b4 trying to get the "Slim Jim" flavor. I used ground beef chuck, ground pork butt and some ground pork jowl. Mixed the meat and seasonings then ground again

Tried out my new stuffing tube (Thanks Scott and John) it worked out great, might have to add a little more water next time, it was a little tuff cranking out

Made 2 rolls like this one you can just see the second one on the right

All cut to size and drieing for an hr or 2

Cut to snack stick length and packaged in 1 lb packs for the freezer

Only  5 lb made it to the freezer the rest was to snack on.
I will do this again

Looks great Curt.  I'm glad the tube worked well for you.  And for sure with that small of a tube you have to keep the meat a little more moist so it flows.  If you let it stiffen up too much it could be tuff to crank out.

Good looking sticks!! I'm in the process of collecting recipes.. Just ordered my Bradley yesterday.. Sooooo excited.. can't wait for it to arrive.. Thanks Yard & Pool guys!

Question for the guys that smoke the sticks laying on the racks:
Do you have to rotate the sticks during the smoke?

Yes

Top to bottom front to back after the smoke, about every 2 or 3 hr

No just the racks

Pull out the bottom rack place it on the table then pull out the top rack rotate it 180 degrees put it on the bottom and the rack on the table goes on the top then the second rack from the bottom changes places with the second rack from the top and so on
