Title: Jerky question

Ok, I was making 15 lbs of jerky and It was taking longer then I thought. I started around 3:00pm and around 10:30pm realized that it needed more time. I was alone because my wife is in California visiting her mom who is dying from lung cancer.I decided to pull it from the Bradley and store it in the refrigerator to finish later. Is this going to ruin the jerky?? Will be like shoe leather??

I don't think you ruined it by putting it in the reefer.

If you have a dehydrator, I would put it in there.

If not, back into the Bradley.

At this point you are just trying to dry it.

This is a tough call. Smoking then putting in fridge, its prob close to being done but the fridge might really make it very brittle.
